One could not discover the Comoro Islands without appreciating the flavour of its gastronomy. Some traditional recipes are, in fact, delicious, such as the 'Pilawo' or the 'Samoussas'. Unlike many other islands' population, one can find, in the local cuisine, a clever mixing of products from nature and spices.
Here are some Comorian recipes: The 'Matala': recipe which was inspired by the Madagascan's cuisine. It is composed of manioc's leaf cooked with garlic, of meat or fish and of coconut milk. The whole is served with rice and, of course, spicy sauce. The 'Kakamoku': soup made of fishes, tomatoes, citrus and pimento. The 'Pilao': local paella, which is made of curcuma-flavoured rice, of meat, cinnamon and tomato. 'Samoussas': small meat or fish-cake, often spicy and which is made with batter.
For weddings, there are also the "fritters" (also called 'donnasses'). They are made of flour, evaporated milk, eggs, vanilla and bicarbonate of soda. They are deep-fried.
