About Mayotte > Cuisine
You cannot discover Mayotte without knowing the local gastronomy with its variety of spices. The traditional recipes are delicious and various although these recipes are now in competition by the traditional 'brochettis', which are the name for beef meat kebab, or the 'mabawa', which is the same as the chicken wings.
Just like the cuisine of the other Comoro's islands, this one is a mixture of traditional cuisine with manioc and other local products blended with some imported products.
The 'mataba': recipe inspired by the Madagascans and composed of manioc leaf cooked with garlic, of meat or fish and of coconut milk. The whole is served with rice and, of course, with spicy sauce.
The 'kakamoku': soup composed of fishes, tomatoes, citrus and pimento.
The 'pilao': local paella composed of curcuma-flavoured rice, meat, canella and tomato.
The 'samoussas': small savoury pastry made of meat or fish, often spicy and made from flour pasta. They are eaten during parties and invitations.
